Ingredients
  • 1cupChopped Potatoes3 Medium Sized Potatoes
  • 1cupFresh Green Peas
  • 3/4cupFinely Chopped Onions2 Medium sized Onions
  • 3/4cupFinely Chopped Tomatoes3 Medium sized Tomatoes
  • 1/4cupFinely Chopped Coriander Leaves
  • 1tspGinger Garlic Paste
  • 1tspKashmiri Red Chilli Powder
  • 1/2tspGaram Masala Powder
  • 2tspCoriander Powder
  • 1/2tspTurmeric Powder
  • 1/4tspAsafoetida
  • 1/4tspSugar
  • 1tspCumin Seeds
  • 2tbspOil
  • Water as needed
  • 2tspKasoor Methi/Dried Fenugreek Leaves
Instructions
  1. In a thick bottomed pan, heat 1 tbsp of oil and fry potato cubes on low flame.
  2. As they turn slight golden brown, remove them from the oil. Keep them aside.
  3. In the same pan, add remaining oil. Splutter cumin seeds and then add asafoetida.
  4. Next add finely chopped onions, fry on low flame.
  5. As they turn translucent, add ginger garlic paste and cook for a minute or two.
  6. Add finely chopped tomatoes and cook for 2-3 mins on low flame.
  7. Next add all the spice powders – red chilli powder, coriander powder, garam masala powder, turmeric powder, sugar and salt as needed.
  8. Cook the spice powders until the raw smell is gone, for about 5 mins on low flame.
  9. Add a cup of water and let the gravy boil.
  10. Next add fresh green peas and if required, another half a cup of water. Let the gravy cook on low flame for 3-4 mins.
  11. Add shallow fried potatoes and continue cooking the gravy for 3-4 mins.
  12. Finally add crushed kasoor methi and mix well.
  13. Add finely chopped coriander leaves and remove from heat.
  14. Serve hot as a side dish for poori, chapati, roti, phulka or even pulao.
