Instructions
In a pot, bring water and sugar to a slow boil. Stir until the sugar dissolves.
Check for sweetness at this stage and add sugar as needed. Once the sugar syrup is clear, remove from heat and cool it down.
Meanwhile, blend mint leaves and lemon juice until smooth.
Add the mint lemon extract to the cooled down sugar syrup and mix well.
Strain the mixture (optional) to remove the mint sediments.
Pour the mixture into popsicle moulds till top and cover with the lid. Freeze for 6-8 hrs or leave it overnight.
To unmould, run the popsicle moulds in water at room temperature and gently remove. Serve immediately.
