Boil potatoes in pressure cooker for 1-2 whistles, let the pressure drop naturally. Let the potatoes cool down. Remove the skin and chop them into small pieces.
In a pan, heat oil. Add mustard seeds and as they splutter, add finely chopped green chillies, ginger and curry leaves.
Finally add asafoetida and turmeric powder.
Now add chopped boiled potatoes.
Mash the potatoes gently and mix them well. Add salt as needed.
Cook for 5-6 mins on low flame and add finely chopped coriander leaves. Mix well. Set aside.
To make Spicy Green Chutney –
Add all ingredients under Green Chutney into a mixer jar.
Add as little water as possible and grind into a smooth paste. Remove onto a bowl.
To make Bombay Masala Toast –
Prepare the bread slices by spreading butter on one side of the bread slices.
Turn over the bread slices to the other side that is not buttered. Spread a layer of green chutney.
Now add 1-2 tablespoon of potato masala on two of the bread slices and spread it evenly.
Next place onion and tomato roundels. If adding cheese, sprinkle grated cheese evenly on top.
Sprinkle a few pinches of roasted cumin powder and chaat masala powder on top. Cover with the other two slices of bread.
Prepare the stove top toaster/sandwich grill by greasing it with butter/oil. Place the prepared sandwich (with buttered sides of the bread facing outwards) and close it tightly. If there is a lot of filling, it might become difficult to fully close it. Close it as much as possible.
Place it on low flame and cook on each side for 3-4 mins. Gently open the sandwich grill, remove the toast. Repeat the same with rest of the bread slices.
Serve hot with spicy green chutney and tomato ketchup. Sprinkle sev on top (optional)
