In a large mixing bowl, add finely chopped onions, grated carrots, finely chopped dil leaves, roasted peanuts and finely chopped green chillies. Add salt as needed.
Mix well with hands until onions start leaving water.
Add rice flour and mix it well. The mixture would look crumbly.
Add water little by little and knead into a dough that is neither too tight nor too loose. I approximately needed ½ cup of water.
Heat the iron tawa/griddle and meanwhile, take a tennis ball sized dough and pat it flat on a baking sheet.
Slowly continue patting it into a thin circle and make a hole in the center.
Carefully overturn the baking sheet onto the hot greased tawa. Pat it for a few seconds and gently remove off the sheet.
Drizzle oil/butter around the edges and let the roti cook for 1-2 mins on medium flame.
Flip it to the other side and cook again for 1-2 mins or until golden brown. Repeat the same with rest of the dough.
Serve hot with coconut chutney or any side dish of your choice.
