Mix whole wheat flour and salt. Knead well and make soft dough by adding water little by little. Mix a teaspoon of oil to the prepared dough and set aside covered for at least 10mins.
In a bowl, mix grated cheese, finely chopped coriander, garam masala powder, chaat masala powder and salt as needed.
Take a ball of the prepared dough. Roll it into a thick roti, put a ball of the cheese mixture inside the rolled-out roti. Close the cheese ball from all the directions.
Gently press it again and roll into a thick paratha. If required, dust additional wheat flour.
On a heated tawa, cook the paratha on both sides until golden brown spots appear. Spread a teaspoon of oil on both sides of the paratha and remove it on to a plate.
Serve hot with any side dish of your choice.

Be cautious when adding salt in the cheese stuffing as the cheese is salty, so is the chaat masala powder.
The cheese is melty and oozy when hot, so prepare the parathas only when you are ready to serve.
It’s fairly simple to roll out this paratha as the stuffing is very soft. You would be tempted to roll it out too thin, but while cooking the cheese oozes out really fast. Its helps to have a hot tawa while cooking the paratha or else the cheese starts melting from inside slowly.
