Baby Potato Roast | Stove Top Roast Baby Potatoes

MEASUREMENT
1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml
Ingredients
- 15 Baby Potatoes
- 1 tablespoon Oil
- ¼ teaspoon Turmeric Powder
- ½ teaspoon Sambar Powder adjust per preference
- Salt as needed
Instructions
- In a pressure cooker, cook thoroughly washed 15 Baby Potatoes in some water for 1 or 2 whistles. Once the pressure drops, open the lid of the pressure cooker and run the potatoes through cold water. Remove the peel off and set aside.
- In a nonstick pan, heat 1 tablespoon Oil. Add peeled baby potatoes. Cook on low or medium flame until they are golden browned in all places.
- Keep tossing them over so that they are roasted equally. On low flame, add Salt as needed, ¼ teaspoon Turmeric Powder and ½ teaspoon Sambar Powder. Toss the potatoes again until the spices are coated well. Remove from heat.
- Serve hot as a side with rice! Goes very well with Sambar or Rasam or with plain rice and ghee :)

Notes
- If baby potatoes are not available, regular potatoes can be used. Chop them up into 4 quarters.
- Adjust spices as per needed. Sambar Powder can be replaced by red chilli powder too.
- Use cast iron pan for even cooking.
- Toss the potatoes regularly to ensure even roasting.
