    Bombay Masala Toast | Masala Toast Sandwich

    Mumbai Masala Toast

    Another week and another Friday to be thankful for. There is a lot of uncertainty around us, chaos around us and being locked down, it is not the best time of our lives. But to put to perspective, we have a roof over our head, food on the table, loved ones safe and reachable and a working internet connection. If anything, this covid situation has made me appreciate every single small thing in my life and before I bring myself to complain, I think of the plight of many others who are not as privileged. Enough of lockdown gyaan and back to the recipe of the day – Bombay Masala Toast. Remember the Basic Sourdough Bread that I made a few days ago?! I used it up in the most delicious way, with this simple yet amazing Mumbaiyya Street food Masala Toast Sandwich.

    Bombay Masala Toast Sandwich

    Years ago, the sister and I in our small kitchen with no access to a sandwich maker or even a toaster oven, happened to watch a food show that featured Bombay Masala Toast. We might have still been in our late teens and yet, potato was our staple food every single day (I kid not!). So we were super impressed by what we saw on the TV and decided to try it at home – without ever having actually tasted it. During the weekend vegetable shopping, we sent dad on a stove top toaster fiasco (like the stove top metal toaster grill we saw on the show) and alas, we didn’t get it in our small town. Dad was back home with bakery fresh bread and we still happily made the masala toast sandwich on our dosa tawa.

    Bombay Masala Toast Sandwich

    A few years later when I saw the stove top toaster grill in one of the super markets, I picked it up quickly. It served us delicious toasts many many times until I finished college, joined work and got our first ever electric sandwich maker (we still have both at my parents’ place). This recipe of Bombay Masala Toast is more than just a recipe, it is pure nostalgia for me, of all the good times and how happy our lives were with what little we had.

    There are different versions of Bombay Masala Toast Sandwich recipe on the internet and mine is just what we have been doing for years now, without ever actually trying it from authentic sources. So, this might not be traditional but I can promise that it is super delicious. The fact that I used my own bread to make this crispy golden sandwich, we absolutely adored it. Again, I missed sev but I really didn’t mind as the tops were super crispy as it is. You can also make this recipe on Panini Press.

    Equipment

    • Stove-top Sandwich Grill
    • Blender

    MEASUREMENT

    1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml

    Ingredients
      

    Potato Masala –

    • 4 Medium Sized Potatoes
    • 1 teaspoon Oil
    • ½ teaspoon Mustard Seeds
    • 1 Green Chilli Finely Chopped
    • ½ inch Ginger Piece Finely Chopped
    • ¼ teaspoon Asafoetida
    • ½ teaspoon Turmeric Powder
    • Salt as needed
    • 2-3 tablespoon Finely Chopped Coriander Leaves
    • Fresh Curry Leaves

    Spicy Green Chutney –

    • ½ cup Coriander Leaves
    • ½ cup Mint Leaves
    • 1-2 Green Chillies
    • ½ teaspoon Chaat Masala
    • ¼ teaspoon Black Salt
    • ½ teaspoon Roasted Cumin Powder
    • 1-2 tablespoon Fresh Lime Juice adjust as needed
    • Salt as needed
    • Water as needed

    Bombay Masala Toast -

    • 8 Bread Slices I used my Sourdough Bread
    • 1-2 tablespoon Butter at room temperature
    • ¼ cup Spicy Green Chutney
    • 1 cup Potato Masala
    • 1 Onion Cut into Roundels
    • 1 Tomato Cut into Roundels
    • 1 teaspoon Chaat Masala Powder
    • 1 teaspoon Roasted Cumin Powder
    • Sev to sprinkle on top optional
    • Cheese optional
    Prevent your screen from going dark

    Instructions
     

    To prepare Potato Masala –

    • Boil potatoes in pressure cooker for 1-2 whistles, let the pressure drop naturally. Let the potatoes cool down. Remove the skin and chop them into small pieces.
    • In a pan, heat oil. Add mustard seeds and as they splutter, add finely chopped green chillies, ginger and curry leaves.
    • Finally add asafoetida and turmeric powder.
    • Now add chopped boiled potatoes.
    • Mash the potatoes gently and mix them well. Add salt as needed.
    • Cook for 5-6 mins on low flame and add finely chopped coriander leaves. Mix well. Set aside.

    To make Spicy Green Chutney –

    • Add all ingredients under Green Chutney into a mixer jar.
    • Add as little water as possible and grind into a smooth paste. Remove onto a bowl.

    To make Bombay Masala Toast –

    • Prepare the bread slices by spreading butter on one side of the bread slices.
    • Turn over the bread slices to the other side that is not buttered. Spread a layer of green chutney.
    • Now add 1-2 tablespoon of potato masala on two of the bread slices and spread it evenly.
    • Next place onion and tomato roundels. If adding cheese, sprinkle grated cheese evenly on top.
    • Sprinkle a few pinches of roasted cumin powder and chaat masala powder on top. Cover with the other two slices of bread.
    • Prepare the stove top toaster/sandwich grill by greasing it with butter/oil. Place the prepared sandwich (with buttered sides of the bread facing outwards) and close it tightly. If there is a lot of filling, it might become difficult to fully close it. Close it as much as possible.
    • Place it on low flame and cook on each side for 3-4 mins. Gently open the sandwich grill, remove the toast. Repeat the same with rest of the bread slices.
    • Serve hot with spicy green chutney and tomato ketchup. Sprinkle sev on top (optional)

    Bombay Masala Toast

    Detailed step-wise picture recipe of making Bombay Masala Toast | Masala Toast Sandwich

    To prepare Potato Masala

    Boil potatoes in pressure cooker for 1-2 whistles, let the pressure drop naturally. Let the potatoes cool down. Remove the skin and chop them into small pieces.

    Recipe Notes

    • If you don’t have a stove top or electric sandwich grill, just toast the bread slices on a cast iron pan. Press it hard on top to seal the bread slices.
    • Adjust spices as per preference.
