When I made Sourdough Burger Buns, the original plan was to make KFC style Veg Zinger Burger but then I didn’t have any luck finding iceberg lettuce. As the burgers were soft and fluffy, I dreamed of making street-food style Tawa Burger. Our vegetable bounty was just delivered and after the soap & water bath, they were resting on our dining table and I had to think on my feet to use the burger buns quick enough to keep up with our dinner plans. One peek into the fridge, the eggs called out to me and I ended up making spicy Egg Tawa Burger! Sometimes, it works in our favor when original plans fail repeatedly.
Egg Tawa Burger is an Indianized version, mostly being sold by the street food vendors. The onion-tomato masala and spices are cooked for a long time on a large flat plan – tawa and as fresh orders are called out, buns are cut in half, lightly toasted in the same tawa. The assembly is a sight to watch, with few other spices and fresh coriander leaves and butter thrown in. For the Tawa Egg Burger, eggs are scrambled into the masala and it filled into the toasted burger buns. Such a simple process, but as the ingredients are cooked on low flame for a long time, each tawa burger custom made per order – it is super delicious.
This recipe of Egg Tawa Burger is my interpretation of the popular Indian street food version. I kept the spices to the bare minimum with Pav Bhaji masala being the main flavoring agent. The masala itself has just onions and tomatoes, slow cooked with spices. I made the masala in a regular pan and then used a part of it for each burger, as I toasted the buns & scrambled the eggs on the tawa. I limited the use of butter, just enough for the flavor. I made pickled onions and they added a really good contrast to the soft & fluffy scrambled eggs in the burger buns. Tawa Burger is delicious just as it is, but you could serve it with the side of green chutney, extra pickled onions or ketchup 🙂

Egg Tawa Burger | Easy Tawa Burger
Equipment
- Thick Bottomed Pan
- Cast Iron Tawa/Flat Pan
MEASUREMENT
1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml
Ingredients
For Spicy Masala –
- 2 Medium Onions
- 1 Large Tomato
- 2 teaspoon Oil/Butter
- 1 teaspoon Ginger Garlic Paste
- 1 teaspoon Pav Bhaji Masala
- 1 teaspoon Red Chilli Powder
- ¼ teaspoon Turmeric Powder
- ¼ teaspoon Garam Masala Powder
- Salt as needed
For Egg Tawa Burger –
- 2-3 Sourdough Burger Buns recipe in details below
- 2-3 Eggs as needed
- Oil/Butter as needed
- Salt as needed
- Fresh Coriander Leaves Finely Chopped
Instructions
To prepare Spicy Masala -
- In a pan heat oil/butter. Add finely chopped onions. Fry until translucent.
- Next add ginger garlic paste and fry on low flame for over 2-3 mins until the raw smell is gone.
- Add finely chopped tomatoes. Cook them on low flame until slightly mushy.
- Now add the spice powders – pav bhaji masala, red chilli powder, turmeric powder and garam masala powder.
- Cook the masala for 7-10 on low flame until the spices are cooked.
- Now add salt as needed.
- As the oil oozes out from sides, the masala is ready.
To prepare Egg Tawa Burger –
- Heat a thick cast iron tawa on low flame. Drizzle butter/oil and once hot, add 2-3 tablespoon of prepared masala. Slowly roast the masala at the center of the tawa.
- Push the masala aside to the edge of the pan and place burger bun (slit across), toast on both sides until golden. Add a dollop or butter or ½ teaspoon of oil if needed.
- Now push the toasted buns to the edge and bring the masala to the center of the tawa. Drizzle some oil or butter if needed. Break open an egg and add salt as needed. Sprinkle finely chopped coriander leaves.
- Scramble the eggs using a spatula, cooking them on low flame.
- Cook the scrambled eggs on low flame to the desired consistency, scrambling them further with the spatula as needed.
- Now place the scrambled eggs on toasted burger bun and carefully transfer the bun to the serving plate.
- Place pickled onions generously all over the top and cover it with the top part of the toasted bun.
- Prepare the egg tawa burgers individually. Serve immediately with more pickled onions and green chutney or ketchup on the side.

Note –
- Adjust spices as per preference.
- You can scramble all the eggs into the masala and toast the buns separately too, if making more than 3 or 4.
