Summer is officially upon us and it’s already crazy hot in my part of the world. Days are humid, sticky and the thought of standing the kitchen is driving me crazy. But then food is my biggest stress buster, so I really cant step away from the favorite place in my home. I have decided to start making summer specials as early as March and that’s the only way we are going to survive this harsh summer. So the first summer special for this year is going to be Fruit Custard recipe.
Fruit Custard is such a simple dessert recipe that all one needs to do is make fruit salad and then pour over homemade custard over it. There are a lot of packaged custard powders out in the market, in various flavors too. I however decided to make eggless custard from scratch without using custard powder. If you really think about it, custard powder is nothing but a flavored thickening agent – either corn flour or arrow root powder.
I made a simple vanilla custard and used the fruits I had handy to make this simple yet delicious Fruit Salad Custard recipe. You can serve this chilled or at room temperature and, this works best as a make ahead dessert too. Chop all the fruits you have and prepare the custard, set it up as fruit custard in single serve bowls, chill. That’s all. I used corn flour, vanilla essence and a pinch of food color (totally optional) to make this basic vanilla custard. It’s eggless, it’s easy and it’s quite delectable too! 1. Keep the cut fruits chilled until the custard is ready.
2. Reserve 4 tbsp of milk and heat the rest in a pan, stirring it around for 2 mins.
3. Meanwhile add corn flour, vanilla essence, yellow food color in a bowl.
4. Add the reserved milk and mix it well so that there are no lumps.
5. Add this mixture to the boiled milk and quickly stir around, to ensure there are no lumps.
6. Cook the custard on low flame, stirring continuously until it thickens slightly. Add sugar and mix well.
7. Continue cooking the custard on low flame until it coats the back of the spoon nicely. Switch off the heat.
8. Let it cool down completely. Mix it with fresh fruits or layer them in between layers of custard. Keep it chilled until ready to serve.
- The custard thickens on cooling down, so don’t worry if it is a little runny when you switch off the flame.
- Use any variety of fruits from applies, grapes, pomegranates, mangoes and bananas.
- Add 2-3 tsp more sugar if you prefer a sweeter custard.
