    Lemon Mint Popsicles, a refreshing summer treat made easily at home! Light, fresh, zingy and delicious these minty lemon popsicles – a few minutes of preparation is all it takes 🙂

    Lemon Mint Popsicles

    So I am going to do a mini-marathon on popsicles, before the summer slowly slips away from us. I started with these creamy, delicious Mango Duet Ice Pops last Friday and today, I have a light, refreshing recipe – Lemon Mint Popsicles! Sometimes it is good to have desserts, that can save us from the heat wave and at the same time not be heavy and loaded with calories. That way these lemon mint popsicles are the best fit, very refreshing and quite delicious too!

    When I made these lemon mint popsicles, I planned on adding some fresh fruit at the bottom but honestly, the lemony mint mixture was so good by itself that I didn’t want to adulterate the flavor. There cannot be a simpler recipe than this – just make a simple sugar syrup, add ground mint and lemon mixture, strain the juice, pour into popsicle moulds, freeze and enjoy! I am all for homemade summer special recipes especially desserts and ice creams, this one turned out exceptionally well and really different from the usual ice creams or popsicles I make at home! These vanished in no time and I might make another batch again 🙂

    MEASUREMENT

    1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml

    Ingredients
      

    • 2 cups Water
    • â…“ cup Sugar adjust as needed
    • 2 Lemons medium sized
    • ¼ Mint Leaves
    Prevent your screen from going dark

    Instructions
     

    • In a pot, bring water and sugar to a slow boil. Stir until the sugar dissolves.
    • Check for sweetness at this stage and add sugar as needed. Once the sugar syrup is clear, remove from heat and cool it down.
    • Meanwhile, blend mint leaves and lemon juice until smooth.
    • Add the mint lemon extract to the cooled down sugar syrup and mix well.
    • Strain the mixture (optional) to remove the mint sediments.
    • Pour the mixture into popsicle moulds till top and cover with the lid. Freeze for 6-8 hrs or leave it overnight.
    • To unmould, run the popsicle moulds in water at room temperature and gently remove. Serve immediately.

    Detailed step-wise picture recipe of making Lemon Mint Popsicles

    1. In a pot, bring water and sugar to a slow boil. Stir until the sugar dissolves.

    2. Check for sweetness at this stage and add sugar as needed. Once the sugar syrup is clear, remove from heat and cool it down.

    3. Meanwhile, blend mint leaves and lemon juice until smooth.

    4. Add the mint lemon extract to the cooled down sugar syrup and mix well.

    5. Strain the mixture (optional) to remove the mint sediments.

    6. Pour the mixture into popsicle moulds till top and cover with the lid. Freeze for 6-8 hrs or leave it overnight.

    Recipe Notes

    • Instead of sugar, honey can be used.
    • I wanted to keep the popsicle clear, hence strained the mixture although it is optional.
    • Add fruits like grapes, berries or pomegranate seeds for added effect and texture.
