    Oats Banana Cookies

    Recently, I found a small pack of oats lying around and had one ripe banana with me. S was out of home on some work and my boredom led me to bake these cookies. I was looking for some cookies using oats over the internet and found a number of recipes most of which used eggs but fixed on a recipe from Yummly which just used two ingredients – oats + banana. I slightly modified the recipe my adding some raisins to the mixture and also dry roasted my oats as I thought that the oats might smell raw even after baking. There is absolutely nothing other than these three ingredients – No sugar, no flour, and no butter/oil/fat. These must be totally guilt-free and would satisfy your taste buds too.

    I made these quite thin but one can make it of the desired thickness. These ended up being a bit chewy, moist and not crisp but we still loved it. The raisins on being baked can turn a bit dark brown on color but nothing to worry as they add up to the sweetness of the cookie. If you are calorie conscious, these cookies are for you. If you have sweet-tooth, these cookies for you. And if you don’t like much of sweetness but are craving for a quick snack, these are for you too. I am sure I am going to repeat these often in my kitchen.

    To make Oats Banana Cookies

    Serves – 2 (made 5 large-ish cookies)

    Time to prepare – 25mins

    What I used –

    • Quick Oats, ½ cup ( I used Quaker)
    • Ripe Banana, 1
    • Raisins, 1 tbsp
    • Oil, ½ tsp

    How I made –

    1. Start by pre-heating the oven at 180 deg C for atleast 10mins.
    2. Dry roast the oats in a pan until a nice aroma comes up. No need to brown them. Should take 3-4 mins.
    3. In a mixer jar, pulse the roasted oats for 3 – 4 mins until they are coarsely ground.
    4. In a bowl, add mashed banana and the oats along with raisins. Mix well. The cookie dough should not be too runny but should hold together.
    5. In a baking tray lined with parchment paper, apply ½ teaspoon of oil evenly. Alternatively one can spray some oil too. Take a ball of the cookie dough and spread it on the pan to the desired thickness. I just patted the cookie dough with my fingers until it was thin.
    6. Bake the cookies in the oven for 12 – 15mins or the bottoms are golden brown at 170 deg C.
    7. Remove from the oven and let them cool completely.
    8. Serve as it is or with milk. We enjoyed it as a snack throughout the day.

    Note -

    • Dry roasting oats is optional but I felt that the raw smell would be too strong otherwise.
    • Make sure the banana is ripe enough as we don’t add anything else for the sweetness.
    • These cookies don’t raise or increase in size as we have not adding any baking powder/soda.
    • Raisins are optional but add to the taste.
    • If the cookie dough is too sticky, use some oil to grease your fingers.
