    How to make Nungu Sarbath Recipe

    Nungu Sarbath is a delicious but extremely simple summer cool drink recipe that is made with nungu or ice apples and nannari syrup. It is perfect thirst quencher and best for the summer heat. This sarbath is not only tasty but it also has a lot of medicinal benefits too. It is mildly sweet and not too calorie-rich unlike the sugar loaded carbonated drinks available in the market and can be given to kids and adults alike.     Ingredients

    Nungu also known as ice apple is the palmyra fruit that is soft, succulent and very refreshing. It is a seasonal fruit - a summer delicacy, that acts as a natural coolant but also has a lot of essential vitamins and minerals. It helps fight heat strokes & fatigue that are quite common during the summer. The fruit contains three pods, each of which hold the soft juicy edible part.

    Nannari Syrup is made from Nannari, also known as Sarasaparilla roots. These roots are a powerhouse of medicinal properties and also act as a natural coolant. The syrup is traditionally made by boiling the roots in water and is sweetened using sugar/jaggery. In this recipe, I have used store bought ready to use nannari syrup.

    Lemon Juice adds to the taste of the nungu sarbath and also helps fight the summer heat.

    Chilled Water and Ice Cubes can be added as per individual preferences.

    Top Tips

    Assemble all the ingredients required for making the sarbath and it can be made in a large pot instead of individual servings.

    Choose tender ice apples/nungu as the hard ones are not good for the tummy and can cause upset stomach. If the nungu is hard to mash by hand/spoon, chop them or pulse them until it is coarsely crushed.

    You can make nungu sarbath recipe in bulk and store it in an airtight container in fridge until it is ready to be served for the flavors to blend in really well.

    Substitutions & Variations

    The taste and flavor for this nungu sarbath comes from nannari syrup and it can be adjusted depending on the taste preferences.

    You can also replace or additionally add tender coconut pieces to make elaneer sarbath with the same recipe.

    Storing & Serving Suggestions

    Nungu Sarbath is best served chilled immediately. It can also be made ahead and stored in fridge until it is ready to be served. All the ingredients can be prepared & assembled ahead of time in fridge too. It is best to consume it within a day, even if refrigerated.

    Nungu Sarbath Recipe with Step by Step Pictures

    Assemble all the ingredients required including the serving glasses – ½ cup coarsely mashed nungu, 3-4 tablespoon nannari syrup, 2 cups chilled water, ½ to 1 tablespoon lemon juice (½ lemon) and ice cubes as needed.

    Nungu Sarbath Ingredients

    In each serving glass, add 2-3 tablespoon of mashed nungu.

    Next add 1-2 tablespoon nannari syrup, ½ tablespoon lemon juice.

    Next add 1 cup of chilled water.

    Add 4-5 ice cubes as preferred.

    Stir well until the syrup and water are mixed together.

    Serve chilled immediately!

    MEASUREMENT

    1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml

    Ingredients
      

    • ½ cup Nungu/Ice Apples coarsely mashed/chopped
    • 3-4 tablespoon Nannari Syrup
    • 2 cups Chilled Water
    • ½ to 1 tablespoon Lemon Juice
    • 8-10 Ice Cubes
