    Broccoli Almond Soup is creamy, comforting and nutrient-rich soup that is perfect for chilly evenings or a light meal. Made with fresh broccoli, almonds, and a hint of garlic, its smooth, flavorful, and packed with goodness - no cream needed!     Broccoli and Almond Soup Recipe

    Step by Step Instructions

    In a pan heat 2 teaspoon oil. Add 3-4 garlic cloves and sautรฉ for a minute. Next add 1 onion finely chopped and fry until translucent.

    Add 1.5 cups of cleaned, blanched broccoli florets and stalks along with 10 almonds (soaked, skin removed), fry for a few minutes.

    Add about ยฝ cup water along with salt as needed. Cook covered for 6-7 mins until the broccoli is soft & cooked.

    Let it cool and then grind it into a fine paste.

    Add the ground paste back to the pan, add water if required. Next add ยฝ cup milk and mix well.

    Bring the soup to a boil on low flame. Remove from heat.

    Pour the soup into bowls and garnish with toasted, slivered almonds. Season it with pepper as needed. Serve hot or warm.

    • Do not overcook the broccoli and cook just until tender to keep the soup flavorful and vibrant.
    • Adjust the consistency of the soup by adding more milk, water while blending or after depending on the preferred consistency.

    MEASUREMENT

    1 cup = 250ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml

    Ingredients
      

    • 1.5 cups Broccoli Florets blanched
    • 10 Almonds soaked, skin removed
    • 1 Onion finely chopped
    • 3-4 Garlic Cloves

    • 1 tablespoon Slivered Almonds to garnish
